Variation of extraction time for 12 minutes and HCL concentration of 1:5 resulted in yields with better quality than other variables. From the study results, it is known that the HCL concentration time and temperature affect the pH value. This study uses various types of lumadang fish skin, which is pretreated using 0.1 M HCl to remove fat and then hydrolyzed using aquadest with a variable ratio (1:3 1:4 1:5 1:6 1:7), variable hydrolysis time (15, 20, 25, 30, 35 min) and hydrolysis temperature variables (50☌, 60☌, 70☌, 80☌) with Ultrasonic method. The hydrolysis method using ultrasonic is an option in the manufacture of gelatin because it can reduce the extraction time. This study aims to determine the effect of time, temperature, and HCL concentration on pH during the gelatin hydrolysis process. In order for the production of gelatin by the purpose, ph value control is important. Ph is one thing that can affect the type of gelatin. Currently, gelatin has many roles, from pharmaceutical to food.
